. A Little Taste of MawMaw's .

One day we were missing home, and especially missing MawMaw...

so we decided to make some new memories that brought her along with us :)

I found a recipe for "Canned Beets" written in MawMaw Fetty's own handwriting,

and we went to town:

Heating the jars, the lids, and cooking the beets down to peel

*Note- we took it way back to the 'old school' days b/c we didn't have 'mason' jars & fancy lids... we had been saving our spaghetti jars so we could make beets & pickles- we MAY have been pretty impressed with ourselves. LOL.

 

Once they were peeled we cut them and dropped them into the pot to "pickle" then filled the jars:

Then our next adventure... PICKLES!!!!

Gosh we had missed these.

We cleaned the cucumbers, cut them and filled the jars

Once the "pickling" mixture was ready, we poured them into the hot jars and put the lids on to seal.

Amazingly enough- all of the jars (but one pickle and one beet jar) totally re-sealed!

We were SO excited to have PICKLES back in our lives, and were a little proud of ourselves for accomplishing the task 'all by ourselves' - haha.

*We may be bias (or pickle deprived), but we think these were some of THE BEST pickles we had ever tasted!!!!

Thanks MawMaw for you recipe, and the LOVE with which you make SO many yummy dishes to share with us (and everyone else in the family).

We miss you A LOT, but it sure was nice "having you" in our kitchen with us ;)

. Feeling Better Already .

Ok this was from a while back, but it is too hilarious not to share.

While we traveled to Thailand for some R&R, Levi also brought along an ear infection :(

So we were blessed to be able to see a great doctor there and get some meds for him that helped clear it up in no time.

The best part was how they recorded his name:

"MASTER" Levi Elliot Eggleton

Yep that will make anyone feel better in a jiffy!

 

 Sleepy eyes and all- still smiling :)

Patio Playtime Discoveries

Just as we were sipping on some water, pushing the trucks around... along came a suprise :)

We heard a little noise so we went on the search to find out just who/what had joined our patio:

"I see it Mama"

 " Here- I'll corner it in.... "

 

"Do you see it? "

"It's big, but I think I'll take a closer look"

 "Maybe a little CLOSER..."

 "Whoa- this bug is cool, Mama, what is it?"

So we learned what dragonflies were that day- Gotta love learning through real life discoveries.

If you look closely- you will notice that it's on its back, but totally still alive.  It kept flying into the wall, then just chilling there for a while but would never fly away.  

Levi got brave once and touched it, but once he felt its little legs on his finger... he had enough, so from then on- he would just WATCH... very intently:

He is SUCH a BOY!!!

(And I love it ;) )

:: Big BOY Bed ::

 Well it turns out that this little guy was over the "toddler" bed.  He would wake up in the middle of the night and make his way over to this bed and just stand there and cry...

SO we decided it was time to officially make the shift- He seemed ready :)

. My Birthday Adventures w. my Boys .

 Our first stop was this caving sight.

 

" We packed our snacks, water bottles, and picked up some head lamps... and we were ready for our hike to the cave "

We asked the man at the entrance to take a picture for us...

However- you will notice the one where we were all looking and smiling turned out a little fuzzy- and it looks like Craig was the only one aware there was a "take two"

LOL!

 

After the hike to the cave, we decided to just cruise through the park a bit & enjoy the handi-work of our Creator:

 

 

  

Found a little boat dock area next to a small beach:

 

  We were enjoying the scootie a little too much, so we decided that an honorary photo shoot was necessary:

 

Totally has the "Dumb & Dumber" appeal- Doesn't it?                                                            It MAY have something to do with the helmets :)

I LOVE making Family Memories like these:

After our photo shoot- we headed on down to another beach area in the park just to play on the rocks:

 

I guess we were having a LITTLE too much fun for someone:

 

We still decided to be adventurous for ol' times sake:

 Gosh I could look at these beautiful mountains along the sea shore all day:

 

 I don't think I could have asked for a better day or a better way to spend my birthday this year!

So grateful for my guys & the way they love me so well!!!
